I don't know about you, but after this holiday week, I'm ready to reset back to my healthy foods and routines. This week I’m focusing on healthy salads and protein bowl recipes! These recipes are easy to make and not super time consuming - so having these on hand will make your meals a breeze this week. Plus they’re higher in protein, making them filling and perfect for getting back into the swing of things! P.S.: I’ve also included a few recipes to use up the rest of that leftover turkey - I know we all have some still. 😉 Meal Prep Southwest Chicken Burrito BowlsI've been making these bowls for years and they are still one of my most popular recipes for easy dinners or lunches. They're gluten-free and can be made in just 30-minutes! I love the southwestern flavor in these. The smoky and savory taste in the chicken, with a little spice kick is so good! Combine that with some hearty rice, flavorful beans, veggies, and the creamy avocado sauce to really bring it all together. This is easily one of my top choices for a busy week!
