Easy Fall Dinners to Make This Week

Easy Fall Dinners to Make This Week

Hi Reader,

Fall dinners are all about that balance between comforting and simple. I love meals that make the whole house smell amazing without spending hours in the kitchen.

This week’s roundup is packed with flavorful, easy recipes that are perfect for busy weeknights. From hearty pastas to one-pan meals and seasonal favorites, these dinners bring all the best fall vibes to your table in the easiest way possible.

Butternut Chicken Kale Caesar Salad

This Butternut Chicken Kale Caesar Bowl is inspired by one of my favorite restaurant salads, but made at home with 51 grams of protein. It’s my favorite ways to incorporate fall produce! Not only is it delicious, but all the ingredients are super easy to prepare and cook on a single baking sheet, which keeps cleanup quick and easy.

All things fall, all things pumpkin, all things pasta. This Creamy Pumpkin Pasta recipe is the BEST for a healthy comforting weeknight dinner. This easy meal has been my favorite fall tradition for years! This yummy dish comes together in just 30 minutes.

These Kung Pao Chicken Bowls come with 46 grams of protein and lots of flavorful veggies! I love that these are a healthier twist on one of my favorite classic takeout recipes. The chicken is pan-fried until golden and coated in the most incredible sweet and spicy sauce.

This Chicken Alfredo Spaghetti Squash Bake is creamy, cheesy, and has all the goodness of classic chicken Alfredo, but lightened up and made with 43 grams of protein, minimal carbs, and lots of fiber thanks to the veggies! While it takes a little over an hour from start to finish, most of the time is super hands-off.

This Chicken Sausage Orzo Casserole is one of my go-to comfort food dinners when I want something warm and cozy that’s quick and healthy! I’ve been testing this recipe for a while, and I can honestly say it’s SO perfect. It reminds me of the viral baked feta pasta, but with a fun and unique twist.
