Breakfasts & Sweets

These Pumpkin Overnight Oats are a recipe I've been making for years. I love that these oats come together in just 5 minutes, you refrigerate overnight and they're ready to go for the next morning. They're perfectly sweet and creamy!

This Pumpkin Baked Oatmeal recipe is made in one bowl, then transferred to a baking dish and baked in the oven, making it a super easy recipe. It’s gluten-free, vegetarian, dairy-free, refined sugar-free, and will make your house smell amazing!

Warm, sweet, and delicious Mini Apple Pies that are gluten-free and easy to make! Mix up the gluten-free crust dough, chill, and then press into a muffin tin. Fill each one with homemade apple pie filling and bake!

Higher in protein and made in 10-minutes prep time (almost entirely in a blender), I love how easy this recipe is. It’s made with cottage cheese, so each slice has 5 grams of protein and that perfect cinnamon swirl filling layer!

Savory Dinners

This Butternut Chicken Kale Caesar Bowl recipe is one of my favorite ways to incorporate fall produce. Not only is it delicious, but all the ingredients are super easy to prepare and cook on a single baking sheet, which keeps cleanup quick and easy. The whole meal is ready in just an hour.

These Wild Rice Fall Harvest Bowls have been one of my favorite easy, healthy fall dinners for years. With 30 grams of protein and tons of flavor, every bite is so good! Roasted Brussels sprouts, carrots, sweet potatoes, fresh greens, wild rice, and pepitas all topped with a hearty balsamic tahini dressing.

Each bowl is hearty, vegan, nutritious, and SO flavorful. The roasted sweet potatoes, broccoli, and chickpeas cook on a single sheet pan, then the whipped maple tahini sauce brings these bowls together and takes them up a notch. This quick and low-effort easy recipe is perfect for weeknight dinners or meal prep bowls!

Smokey, sweet, and over 50 grams of protein per serving, this Slow Cooker Ribs recipe is so good! Fall-off-the-bone tender, the ribs are coated in a homemade barbecue, meaning every bite is incredibly flavorful. Cooked low and slow, it’s a hands-off recipe I can prep in the morning and come back to later in the day.
