Give Me Cozy šŸ«¶šŸ»

Hi Reader,

The weather has finally started to cool down here in Oklahoma. I am so here for it. Those crisp mornings, the cool breeze, and that little chill in the air...it’s giving all the cozy vibes. This is the time of year when I find myself craving warm, comforting meals, baking something sweet in the oven, and sipping on a cozy drink while dinner simmers away.

This week’s line-up is full of those fall favorites, from hearty dinner bowls, cozy treats, and a couple of drinks that’ll make you want to curl up under a blanket and stay awhile. It’s basically fall comfort in recipe form, you're going to love these!

Wild Rice Harvest Bowls

These Wild Rice Fall Harvest Bowls have been one of my favorite easy, healthy fall dinners for years. With 30 grams of protein and tons of flavor, every bite is so good! Roasted Brussels sprouts, carrots, sweet potatoes, fresh greens, wild rice, and pepitas all topped with a hearty balsamic tahini dressing. These Fall Harvest Bowls can be made in just over 30 minutes and are perfect for the entire family!

These Sage Chicken Meatballs w/Wild Rice bowls are everything I want in a fall dinner! With 45 grams of protein, these healthy bowls are super filling and SO flavorful. I love the flavor of the roasted veggies and the meatballs covered in the sage butter sauce really bring the cozy and delicious together.

These Turkey Sage Meatballs are flavorful, healthy, and come together so quickly! You can have this full meal ready in just 30 minutes. The meatballs are savory and satisfying, paired with orzo, kale, and nutty parmesan. The robust sage flavor compliments the ground turkey, making every bite delightful!

Cottage Cheese Pumpkin Cheesecake with 10 grams of protein that’s SO good! Made with pumpkin puree, pumpkin spice, and cottage cheese, this healthy high-protein cheesecake is actually sweet, creamy, and has that classic cheesecake texture we all know and love.

These Apple Pie Cookies are one of my favorite treats for fall! With buttery, cinnamon apple goodness, brown sugar oats, and a white chocolate drizzle, every bite of these soft oatmeal cookies is melt-in-your-mouth delicious. These cookies are a go-to cozy recipe for me!

Iced Apple Crisp Cream Chai that’s dairy-free, can be made in 15 minutes, and tastes just like the real deal! The best part is that the syrup lasts for up to 2 weeks, so you can make homemade apple chai drinks all fall long.

Whip up this Starbucks Copycat Iced Pecan Crunch Oatmilk Latte in minutes and no barista skills are required! The homemade pecan syrup is nutty and sweet and takes just 5 minutes and 2 ingredients.
