Overnight oats have become one of my absolute favorite breakfasts as a busy mom. They’re quick to prep, easy to customize, and they hold up so well in the fridge. Meaning, you can grab a healthy breakfast even on those chaotic, everyone-needs-something mornings. I’ve made so many versions over the years, and the ones I keep coming back to are the ones that are creamy, filling, and actually delicious. The best part is with just a few simple ingredients, you can build a balanced, nutrient-dense breakfast that keeps you full and energized all morning long.

Below is my favorite formula for putting together overnight oats that always taste amazing and check every box for a nourishing start to the day.

A Healthy Breakfast Formula for Overnight Oats

Higher Fiber Ingredients: Fiber is key for a breakfast that keeps you full and supports digestion. Luckily, overnight oats make it easy to get more of it in.

Healthy Fats: Healthy fats are what make overnight oats creamy, satisfying, and long-lasting through a busy morning. If you ever feel like your oats are missing something, adding a healthy fat usually fixes it instantly.

High Protein Add-Ins: This is the part that turns overnight oats from a snack into a truly filling breakfast. Something I rely on to get through school drop-off, work, and the busyness that follows.

Here's a quick list of my favorite go-to healthy and nutritious ingredients to get you headed in the right direction!

Healthy Fiber:

  • Rolled oats (the base of every good overnight oats recipe)
  • Chia seeds for extra thickness and fiber
  • Berries for natural sweetness and antioxidants
  • Ground flaxseed to stir in or sprinkle on top

Healthy Fats:

  • Almond butter or peanut butter for richness
  • Chopped nuts like pecans or walnuts
  • Coconut milk or a splash of full-fat yogurt
  • Hemp seeds for a mild, nutty flavor

Protein Add-Ins:

  • Greek yogurt to add creaminess and a big protein boost
  • Protein powder in your favorite flavor
  • Cottage cheese (it blends in surprisingly well!)
  • Nut butter or chopped nuts for a little extra

My Favorite Overnight Oat Recipes

These are a few of my favorite, on repeat recipes for overnight oats that I go back to time and time again. They're healthy, nutrient-dense, and so easy to make. Plus, they're delicious! These store well in the fridge for easy, prep-ahead for the week breakfasts as well.

Apple Cinnamon Overnight Oats that taste just like apple pie for breakfast! Made with just 6 simple ingredients in 5 minutes, this easy recipe is healthy and higher in protein. Every bite is so good and you can even meal prep several all at one time for the week ahead!


These Berry Overnight Oats have been my go-to for easy, healthy breakfasts for YEARS! They only take 5 minutes to make and are full of delicious flavor, nutrients and fiber. With 15 grams of protein, I love that these oats are higher in protein and filling.


I’ve been making these on repeat lately and they’re the best high-protein breakfast. With sweet chopped dates for that signature caramel flavor, a layer of chocolate and chopping peanuts, they taste like a total treat! These have 26 grams of protein and can be made in just 5 minutes.


These Chia Overnight Oats are creamy, perfectly sweet, and so yummy! They only take about 5 minutes to mix together, then they refrigerate overnight and are ready to go in the morning. They have 15 grams of protein and 13 grams of fiber. I love this one for busy mornings.


They’re sweet, creamy, and have the perfect kick of coffee balanced with chocolatey goodness. The topping is light and fluffy, making these taste like an indulgent treat for breakfast! As a busy mom of 3, I love that they can be prepped in just 5 minutes and have 26 grams of protein per serving.
